Spring is finally here, and with it, hopefully, comes that warmer weather and fresh Spring vegetables. Your question this week is:
What’s your favorite Spring vegetable?

Just with a squirt of fresh lemon, or sautéed with spice. I once had bacon wrapped asparagus and that was to die for.
Sounds delicious! I love it almost any way you can cook it.😄 I recently made prosciutto-wrapped asparagus spears as one of our snacks (sometimes we like to do snack and movie nights) and they were really yummy.

We don’t get asparagus until fall… I wonder why? Soon decent melons will come in… I guess good old fresh green beans are a sign of spring to me.
Wow, that’s really interesting Kim! Asparagus is one of the first things we see after winter. I have a couple of spears showing their heads in my garden. Fresh green beans are great too. I think things just have a lot more flavor when they’re in season. I’m grateful that I can get the things I love year-round though….Hope you have a fantabulous weekend and a happy Easter!
My mind turned to fruit at first as I love eating the small sweet strawberries that grow here. Vegetables? I can’t think of one that I can find only in spring.

As far as veggies go, being a gardener, I was thinking about things that start to come up in the Spring like asparagus, lettuce, peas, etc. With grocery stores everywhere these days, we can really get pretty much anything any time of year, can’t we?😊 Have a lovely weekend!

Not really sure what would be a spring vegetable, but I do love tomatoes (year round!) 😀
P.S. Yes I know it is technically a fruit. But it will always be a veggie in my mind. LOL!
I’m with you! I know it’s a fruit, but I just can’t think of it that way…. lol… I’ll be planting our tomatoes in about a month. We eat them year ’round also, but there’s just nothing quite like one straight out of the garden. Thanks for sharing!
Cucumbers aren’t really a Spring veggie, but I do love them with tomatoes, onion and oil/vin. 🙂
